Mary Edith (Coleman) Jackson December 15, 1942 - January 20, 2026 Mary Edith (Coleman) Jackson, a loving mother, grandmother, and great-grandmother, passed away peacefully on January 20, 2026. Born on December 15, 1942, Mary devoted her life to caring for and loving her family, who were always the center of her world. For many years, Mary worked at Snow White Bakery in Abilene, Texas, where she was known for her strong work ethic and warm spirit. Baking was more than a job to her-it was her passion. She found joy in creating homemade treats for her family and friends, often showing her love through something fresh from the oven. Mary is survived by her sons: Curtis Jackson and his wife, Vera, of Winters, Texas; Richard Jackson of Abilene, Texas; and Darren Jackson of Abilene, Texas. She leaves behind cherished grandchildren: Della Blevins and her husband, Jonathon, of Vilseck, Germany; Kimberly Jackson of Winters, Texas; and Kevin Jackson and his fiancée, Adriana, of San Angelo, Texas. Her greatest joy was being "Granny" to her great-grandchildren, Grady and Mason Blevins of Vilseck, Germany, and sweet great-granddaughter Nora of San Angelo, Texas. Mary is also survived by her sister-in-law, Wanda Rigsby of Jenison, Michigan, along with many cousins, nieces, and nephews who loved her dearly. She was preceded in death by her beloved husband of nearly 49 years, Allen Wayne Jackson, whom she loved deeply, and by her parents, Curtis Clois Coleman and Lona Alene Coleman. Mary will be remembered for her kind heart, gentle smile, and the love she poured into her family-and her baking. Her legacy lives on through the many lives she touched and the memories lovingly shared around the table.
